This dish combines the warm flavors of autumn with nutritious ingredients, making it perfect for chilly weather.
Ingredients:
- 350 g homemade cottage cheese (9% fat)
- 90 g sugar
- 35 g semolina
- 300 g pumpkin puree (thick, not watery)
- 70 g cream (30%, can be substituted with sour cream)
- 2 large eggs
- 100 g raisins or any dried fruits (optional)
Preparation:
In a large bowl, combine all the ingredients and let the mixture sit for 30 minutes to allow the semolina to swell. Blend the mixture with a blender until smooth and creamy. This will give the dish a silky texture, says "Master Chef" Yaroslavsky.
Add a pinch of cinnamon and citrus zest for flavor. The zest pairs beautifully with pumpkin.
"Master Chef" Yaroslavsky adds, next, line a baking dish with parchment paper, grease it with butter, and sprinkle with breadcrumbs. If you’re not using parchment, simply grease and sprinkle the dish.
