This simple and delicious recipe will allow you to preserve the taste of summer all year round.

To prepare lecho for the winter, you will need the following ingredients: 2.5 kg of tomatoes, 3-4 medium carrots, 1.5 kg of peppers, 1 kg of cucumbers, 3-4 medium onions, 1 cup of sugar, 3 tablespoons of salt, and 100 grams of sunflower oil. This recipe is designed for six-liter jars.
Preparation method:
Before you begin, place a pot with chopped tomatoes on the fire and bring it to a boil. While the juice is boiling, prepare the vegetables. Cut the carrots into small cubes or strips, depending on your preference.
After 20 minutes of boiling the tomatoes, add the prepared carrots to them. Continue to cook for another 20 minutes to ensure the vegetables are well cooked and have released their juices. Meanwhile, chop the sweet peppers and onions. The onion can be sliced into half-rings, while the peppers should be diced.
Once the carrots and tomatoes are well cooked, add the chopped peppers and onions to the pot. Continue cooking over medium heat until all the ingredients combine into one delicious mixture. It's important to stir the mixture occasionally to prevent the vegetables from sticking to the bottom of the pot.
When the vegetables reach the desired consistency, add the sunflower oil and vinegar. These ingredients will enhance the flavor of the lecho and help preserve it for a long time. The entire process will take about an hour, but the result is worth it.
Once your lecho is ready, prepare sterilized jars. Fill them with hot lecho, leaving a little space at the top. Seal the jars with lids and turn them upside down. Allow the jars to cool at room temperature, then store them in a cool place.
