To make the "Zebra" cake, you will need the following ingredients:
- 100 g egg yolk (5 pcs.)
- 50 g sugar (for yolk)
- 150 g egg white (5 pcs.)
- 100 g sugar (for egg white)
- 80 ml milk
- 100 g butter (62% fat)
- 120 g flour
- 20 g cornstarch
- 20 g cocoa powder
- 10 g flour (additional)
- 200 g milk or dark chocolate
- 20 ml refined vegetable oil
- 30 g dark chocolate
- 5 ml refined vegetable oil
Start by preparing the baking pan: it's best to use a round, detachable mold with a diameter of 22 cm. Line it with parchment paper and grease it with vegetable oil.
Next, mix the yolks with sugar until light and fluffy, then add the milk. Sift the flour and cornstarch together and stir until smooth.
Divide the batter into two portions. To one part, add flour, and to the other, add cocoa powder. Melt the butter and divide it between both portions of the batter, mixing well.
Whip the egg whites until soft peaks form, then add sugar and continue whipping. Divide the egg whites and gently fold them into the batter. Alternate adding the batters to the pan, and bake in a preheated oven at 170 degrees for 35-40 minutes. Allow the baked sponge to cool at room temperature.
For the glaze and decoration: combine the chocolate and vegetable oil, melting them in a water bath or microwave. Place the sponge on an inverted bowl and cover it with the glaze, first with milk chocolate, then with dark chocolate.
Put the cake in the refrigerator for 15 minutes to set the glaze. After that, take it out, and your "Zebra" cake is ready!
