Ingredients:
- 3 eggs (category C1)
- 130 g sugar
- 65 ml milk
- 50 ml vegetable oil
- 100 g flour
- 20 g cocoa powder
- 6 g baking powder
Instructions:
Preheat the oven to 165 °C. Line a baking pan with parchment paper or wrap a springform ring in foil. The height of the pan should be at least 10 cm.
In a deep bowl, beat the room temperature eggs until they minimally increase in volume. Gradually add the sugar and continue beating for 7 minutes until you achieve a fluffy, light mixture that triples in size.
Add the milk and vegetable oil, mixing on low speed until smooth. Gradually incorporate the sifted cocoa, flour, and baking powder in two additions. Whisk or fold the batter with a silicone spatula until fully homogeneous.
Pour the batter into the prepared pan. Bake in the preheated oven for 50 minutes. Check for doneness with a wooden skewer: if it comes out dry, the sponge cake is ready.
Allow the sponge cake to cool slightly in the pan (about 10 minutes), then carefully remove it and transfer it to a wire rack to cool completely. Wrap the cooled sponge cake in plastic wrap and refrigerate for at least 5 hours. The height of the sponge cake will be about 5 cm, making it easy to cut into 3 layers.
