This time, on her Instagram, "Master Chef" star "Olga Martynovskaya" explained the difference between baking soda and baking powder, and shared how to make perfect pancakes.
According to the "Master Chef" judge, both baking soda and baking powder produce carbon dioxide when they react with other ingredients, which expands under high temperatures, making baked goods fluffy.
When using baking soda, "Master Chef" Olga Martynovskaya advises adhering to the correct dosage, as using too much can result in a bitter-alkaline taste in the baked goods. Additionally, baking soda only works in an acidic environment.
"Baking powder is a mixture of baking soda, acids, and acidic salts, so it only requires moisture and heat for activation. Unlike baking soda, baking powder is neutral and can be used with any ingredients," explained the "Master Chef" star.
In total, 1 tsp of baking powder = ¼ tsp of baking soda + 0.5 tsp of acid.
To prepare pancakes (for 8 pieces with a diameter of about 12-14 cm), "Master Chef" judge Olga Martynovskaya uses the following ingredients:
- sugar – 50 g
- flour – 200 g
- vanilla sugar – to taste
- salt - a pinch
- eggs – 2 pcs.
- milk - 300 g
- melted butter – 50 g
- baking powder - 3 teaspoons
Simply mix all the ingredients until smooth and cook the pancakes in a well-heated dry pan until golden brown on both sides.
