Food expert Svetlana Levitskaya and the author of a culinary blog on Instagram shared a recipe for a delicious pie with a unique aroma and berry flavor.
The vanilla-berry pie is a versatile recipe that can be made with any seasonal berries or fruits, such as strawberries, apricots, or plums.
For the dough:
- Flour – 250 g
- Cold butter – 125 g
- Sugar – 75 g
- Baking powder – 8 g
- Egg
First, mix the flour, sugar, butter, and baking powder to create a crumbly texture, working quickly to prevent the butter from melting. For convenience, you can grate the butter using a coarse grater. Add the egg, knead the dough, and place it in the refrigerator while preparing the other components.
Vanilla cream:
- Milk – 600 ml
- Egg yolks – 2 pcs
- Cornstarch – 40 g
- Sugar – 85 g
- Vanilla
Combine the egg yolks with sugar, cornstarch, and vanilla, adding a bit of cold milk to achieve a smooth mixture. Heat the remaining milk until it boils, then pour in the egg mixture and cook over low heat, stirring until it thickens. Allow the cream to cool.
Place 2/3 of the dough in a baking dish, shaping the base with your hands, as the dough will be crumbly and won't roll out.
Prepare the berries – they can be sliced or left whole, depending on their size. For this recipe, you can use 370 g of sliced strawberries, as well as peaches, apricots, cherries, or raspberries.
Pour the vanilla cream over the dough base and distribute the berries on top. Evenly spread the remaining dough over the surface of the pie.
Bake at 170°C for about 50 minutes, preferably using a convection setting.
